Lentil and Cucumber Salad from Herbivoracious
We had some leftover cucumber (two to be exact), and when I looked up recipes, this salad was one that stood out as being somewhat different and also including ingredients I had around the house. The result was tasty, though the mixture of mint and dill was kind of strange; I preferred it with only the mint. Additionally, a bit more flavoring could have been added to make it stand out more. As for the lentils, I made way too many, so in the future I would cut back on the amount mentioned here. Otherwise, it was still pretty good, and something that would taste great cold on a hot summer day.

Warm Chickpea and Artichoke Salad from TasteSpace
Yum! Such a simple recipe but full of delicious ingredients. I also ended up using the herb-oil marinade the artichokes were soaked in as the oil in the frying pan, which saturated everything with an intense, delicious flavor. M. really enjoyed that as well, so it’s safe to say that we will be using this recipe again in the future.

Warm Quinoa Salad with Apples, Walnuts and Chickpeas from What Would Cathy Eat
The best part of this recipe was the vinegar and mustard marinade, which really saturated the apples. However, I think I would either make more of it, or allow it to soak in the quinoa and chickpeas as well, because as it was, the apples were great but the rest of the ingredients tasted somewhat bland. It would be nice to have this strong bite of flavor in all of the meal, and not just one part.
