Potatoes with Quark and Schnittlauch
One of M.’s favorite meals of all time is a rather simple one, and it’s a meal we both can enjoy rather easily; he eats the vegetarian version and I eat the vegan one. All you do is boil potatoes, then top them with vegan butter, plus quark (for him) and soy yogurt (for me), and cut up chives. Sprinkle salt and pepper to taste, mash it all together, and eat it up. Though the vegan version doesn’t quite nail that quark flavor that Germans love, it’s good enough for me. Reminds me of eating baked potatoes as a child, which were always one of my favorite foods.

Roasted Vegetables
Here’s another meal that doesn’t need a real recipe. In short, add all the veggies you have or want, add olive oil, salt, and pepper (plus any other spices you like), mix them up so they’re coated, bake in the oven until browned, then eat! For this dish I included tomatoes, eggplant, onions, garlic, carrots, and chickpeas.
