Simple Salty Sweet Nutty Broccoli Soba from The First Mess
For some strange reason, a few weeks ago I picked up maybe three heads of broccoli at the market. I didn’t actually have an intended use for them, but rather just thought I would eat them. This coming from a household that doesn’t use broccoli other than in one regular recipe. Well, a few days passed and I didn’t have a new use for the broccoli, but then I came across this recipe. It sounded simple and tasty, and the only ingredient I didn’t have on hand were the nuts, something a quick trip to the store remedied. The dish was, as I expected, easy to make, and quite tasty and light. M. doesn’t love soba noodles too much (they are a bit slimy) but every once in awhile I think they are just great. If I were to make this again, I guess the only change would be not Brazil nuts. They tasted fine, but I think any other nut would work just as well and maybe not be as expensive.

I have made a fair share of vegan quiche in my day, so I wasn’t expecting anything new or out of the ordinary when I found this recipe. But it turned out to be a game-changer. The filling is nothing new–tofu, with mixed veggies. But the crust, oh the crust! Gluten-free, made of ground nuts and oats, hearty and delicious… it’s perfect. Definitely becoming a staple around here.
