Roasted Beet Hummus from Paint + Tofu
Given that hummus is a weekly staple in our home, making different varieties of it is a no-brainer. And while M. doesn’t like beets (or says he doesn’t, yet seems to enjoy them when they’re a part of fancy meals), I made this hummus anyway, mostly for myself. The hardest part is peeling the beets, but that aside, it’s easy to make and a nice alternative to the regular hummus. Plus, the color looks great.
