Your Basic Chocolate Cupcake & Vegan Fluffy Buttercream Frosting
Question: What in life cannot be improved by cupcakes?
Answer: Very little.
So was my thinking when I decided to whip up a batch of cupcakes for my German class this past week for Valentine’s Day. Love it or hate it, Valentine’s Day is definitely a little bit sweeter when there is something tasty to celebrate it.
I wanted to go simple so I opted for Your Basic Chocolate Cupcake (page 37) with Vegan Fluffy Buttercream Frosting (page 142). To make things a little more festive, I threw in a fair amount of red dye (which turned out more pink) and took a cue from the ladies over at psheart in order to make decorative toppings from chocolate.
The cupcakes turned out excellent. Unfortunately, the frosting was difficult, as this recipe always seems to be for me (for whatever reason, the chocolate buttercream frosting is always easier). I ended up freezing the frosting, then putting it on, then refrigerating the cupcakes, because otherwise it would just get runny and melty.
The good news? The class enjoyed them. The bad news? Only four of us students showed up, plus the teacher, so now I have the better part of two dozen cupcakes to get rid of. But I have been pretty successful at giving them away, I must admit.
