On Monday, M. and I spent the better part of the day (five hours) at IKEA, looking through kitchens and planning our remodel. At some point, we took a break and had a snack, and while I sat eating my fries and salad in the IKEA restaurant, I thought of the super tasty delicatoboll, a Swedish pastry that they happen to sell at the IKEAs. Of course they aren’t vegan, but I thought there had to be a recipe I could easily veganize.
So I did a quick search and it turns out there already is a vegan recipe. It seems as though every site I encountered has the exact same recipe, so I don’t have a true source, but I used the one from SparkRecipes.
The thing I love about these is that they are made out of things that I normally have around the house, and they’re super easy to make! The recipe calls for a food processor but I mixed everything with a spoon. Some people also choose to refrigerate and then roll them in coconut; I think either could work. This makes about three dozen balls. And the only downfall is that they are a little to easy to eat along the way…
Directions:
-Mix together 3.5 cups oats, 1 cup sugar, and 1/2 cup dry unsweetened cocoa powder.
-Add 10 tablespoons butter and 1 teaspoon vanilla extract and continue mixing.
-Pour in 1 cup of regular brewed coffee and stir until everything is evenly mixed.
-Using your hands, roll the mixture into balls, then roll them in a bowl filled with shredded coconut until they are covered. When done, place in the refrigerator to let them set for an hour.
